Thank you, thank you for all the tips and encouragement after my last post.
Over the weekend, I planned a tentative menu for this week. I am not a planner by nature, so it wasn't an easy task! (Eventually, hopefully, I'll be good enough at shopping and cooking smartly that I won't need to plan things out.) The meals I've planned stretch to brown-bag lunches and probably make enough to put a bit in the freezer, too, as many of you suggested. Here's what I came up with:
Monday (shopping day):
Lunch at work: bagel & cream cheese, salad
Dinner: panko-crusted chicken, roast potatoes and brussels sprouts (love!)
Tuesday:
Lunch: leftover chicken and avocado sandwich, salad
Dinner: Mustard beef with shallots and steamed spinach
Wednesday:
Lunch: chicken and avocado sandwich, salad
Dinner: slow-cooker Thai peanut noodles with tofu
Thursday:
Lunch: leftover peanut noodles
Dinner: out
Friday:
Lunch: More leftover noodles
Dinner: Seared trout, steamed spinach and roasted sweet potato fries
Will I stick to it? I hope so. At least if I have a plan in my mind I'm less likely to get home from work and decide to eat a cracker instead. I do love to cook; what I don't love is being so exhausted all I do is stare blankly at the contents of my fridge and then give up.
I work just a block from my city's indoor farmer's market, so I brought my shopping bags to work today and I'm planning to run out at lunch and grab everything I need. Then, tonight, I have a massage with a therapist I saw a few years ago (not the one that's been trying to kill me). I am excited!

My slow cooker save my week. I have some easy and healthy recipes on my blog if you are interested.
Can I come to your place for dinner? It all sounds wonderful. I love Brussels sprouts, too -- I like to halve them, coat with olive oil, sprinkle lightly with garlic salt and then roast them in a hot oven. The flavor is to die for.

That is some good sounding food Helen. Everything sounds really terrific and healthy too.
I’m so proud of you for looking to add more nutrition to your meals. We all need good fuel to operate these bodies of ours. Keep up the great work and enjoy cooking.
